Chef Jon Burwell’s impressively extensive menu celebrates the ocean’s bounty with dishes such as king crab-stuffed Hawaiian Ono served with chili-garlic puree and dill-infused buerre blanc; he also showcases his range of talent in select non-seafood dishes such as charbroiled herb-marinated rack of Australian lamb with California peaches, montrachet goat cheese, and roasted shallot pinot noir reduction.
