Inspired by his mother’s kitchen and the abundance of good produce grown in his hometown of Michoacán, Primavera’s Executive Chef Giuseppe Jose De La Vega established a love for the culinary arts from an early age.  He recalled enjoying the kitchen’s atmosphere and wanting to learn how to cook.  Chef “Pepe” Jose De La Vega has a tremendous respect for all of his ingredients as evidenced in every dish he prepares.  The level of care and understanding infused into each dish is incredible and demonstrates his fondness and love for his career.
 
 
Raised in Mexico’s Michoacán region, Chef De La Vega was exposed to a broad range of flavors, textures, and colors. The color palette with which he cooks is simple and utilizes mainly reds, greens, yellows, and whites.  These hues signify the fresh heartiness typically associated with classic Italian cooking.  They were also found in every dish my party and I enjoyed.  
 
 
Mentored by a family friend, Chef Pepe De La Vega developed a great affinity for the culinary arts with a never ending desire to learn.  Honing his skills, he was soon able to create Classic Italian cuisine with exquisite technique and consistently great flavor.  Cooking from an early age, Chef Jose Giuseppe De La Vega first learned to cook classic Mexican food before branching out to Italian-style cuisine.  Chef De La Vega began working in the culinary industry with regional assignments.  Eventually, however, he was provided with the opportunity to work in the United States and has been working here ever since.  In addition, it was during this time that he further refined his culinary techniques and started to become known as a new creative genius using Italian food as his medium.  
Chef De La Vega has over 30 years of culinary experience and continues to create, innovate, and reinvent dishes.  He has worked with Primavera Ristorante for more than 20 years, and worked in La Jolla for many years prior. In between courses, my party and I had the opportunity to speak with him about his love for cooking and food and complimented his outstanding creativity, flavor, and service. In speaking with him just for a few minutes I could genuinely see the love he has for his work. Cooking truly is his passion and it permeates Primavera’s dishes.
