Vegetable Biryani

Ingredients
- 1 gal. water
- 3 tsp. plus 5 Tablespoons vegetable oil
- 1 1/4 tsp. salt
- 1 C. Basmati rice
- 1/2 Tbsp. cumin seeds
- 1 large onion, chopped
- 1 Tbsp. turmeric
- 1 tsp. Royal Garam Masala spices
- 1 lb. assorted fresh vegetables (or substitute frozen)
- to taste fresh cilantro, chopped
Directions
Add water, 3 teaspoons oil and 1/4 teaspoon salt to large pot. Bring to a boil and once it starts boiling, add rice. Boil for 10 minutes, then take a few piece sof rice out to test. Press grains of rice--if they are soft then the rice is cooked. If not, continue cooking for 1-2 minutes and retest. Once cooked, drain water and keep rice on the side.
Meanwhile, heat remaining vegetable oil in large pan. Add cumin seeds, mix well, then add onions. Stir until mixture gets light brown. Add tumeric, Royal Garam Masala, remaining salt, and vegetables. Cook until vegetables become soft.
Add cooked rice to vegetable mixture and mix well. Serve in a large plate garnished with fresh cilantro.
